Cranberried Acorn Squash

Wonderful to make for a Holiday meal. It serves 4 so for a group you can double it easily.
Yum.
Ingredients

2acorn squash
-
2 cfresh or dried cranberries

1/2 cmaple syrup
-
1/2 cpacked brown sugar
-
4 Tbspfrozen orange juice concentrate

1 Tbspsoftened butter
-
1 Tbspcinnamon
How to Make Cranberried Acorn Squash
- Preheat oven to 350 degrees F. Spray a covered cassorole dish wtih nonstick oil.
- Cut squash in half, remove seeds and stringy fibers. Quarter each half and boil until soft.
Drain and cool to room temperatures. Peel off skins and mash squash in a large bowl. - Mix squash and remaining ingredients.
Transfer to casserole dish, cover and bake for 45 minutes.
