cranberried acorn squash
This recipe is an old one from Crazed For Cranberries cookbook. Wonderful to make for a Holiday meal. It serves 4 so for a group you can double it easily. Yum.

Ingredients
- 2 - acorn squash
- 2 cups fresh or dried cranberries
- 1/2 cup maple syrup
- 1/2 cup packed brown sugar
- 4 tablespoons frozen orange juice concentrate
- 1 tablespoon softened butter
- 1 tablespoon cinnamon
How To Make cranberried acorn squash

Step 1Preheat oven to 350 degrees F. Spray a covered cassorole dish wtih nonstick oil.

Step 2Cut squash in half, remove seeds and stringy fibers. Quarter each half and boil until soft. Drain and cool to room temperatures. Peel off skins and mash squash in a large bowl.

Step 3Mix squash and remaining ingredients. Transfer to casserole dish, cover and bake for 45 minutes.
