1 can(s)15 oz whole corn kernels, undrained

2eggs, beaten

2 Tbspsugar

1/3 ccornbread mix from package
-
1/4 cbutter, melted
-
2jalapeno peppers, stemmed, seeded and finely minced

1 cmexican blend or cheddar shredded cheese, divided
How to Make COWBOY CORN CASSEROLE
- PREHEAT OVEN TO 350 DEGREES.
- STIR TOGETHER IN A BOWL THE EGGS [BEATEN] CORN, SUGAR, CORNBREAD MIX, MELTED BUTTER, AND 1/2 CUP CHEESE.
- TRANSFER THE MIXTURE TO A BUTTERED 8X8 INCH BAKING DISH.
- BAKE 40 MINUTES, REMOVE FROM OVEN, SPRINKLE REMAINING 1/2 CUP CHEESE ON TOP. RETURN TO OVEN AND BAKE FOR ANOTHER 20 MINUTES.
- ALLOW TO COOL FOR 5 MINUTES BEFORE SERVING.
