  • 2-3 Tbsp
    olive oil
  • 1
    bell pepper( yellow green or orange) cored, seeded, chopped
  • 1
    zucchini, sliced
  • 1/2 c
    sweet onion, thinly sliced
  • 8
    stalks asparagus, cut into 1 inch spears
  • 1/4 tsp
    crushed red pepper flake (optional)
  • 1 dash(es)
    salt and pepper
  • 1 c
  • 1 1/4 c
    water or chicken broth

How to Make Couscous Primavera


  1. In a medium skillet, heat 1-2 tablespoon oil over moderate heat.
  2. Add pepper, zucchini, onion and asparagus and saute, stirring, for 5 minutes or until crisp-tender.
  3. In a medium saucepan, bring 1-1/4 cups water or chicken broth to a boil.
  4. Add remaining oil and couscous.
  5. Cover, remove from heat and let stand 5 minutes.
  6. Toss together couscous, seasonings and vegetables and serve.
