2-3 Tbsp
olive oil
bell pepper( yellow green or orange) cored, seeded, chopped
zucchini, sliced
1/2 c
sweet onion, thinly sliced
stalks asparagus, cut into 1 inch spears
1/4 tsp
crushed red pepper flake (optional)
1 dash(es)
salt and pepper
1 c
1 1/4 c
water or chicken broth

How to Make Couscous Primavera


  • 1In a medium skillet, heat 1-2 tablespoon oil over moderate heat.
  • 2Add pepper, zucchini, onion and asparagus and saute, stirring, for 5 minutes or until crisp-tender.
  • 3In a medium saucepan, bring 1-1/4 cups water or chicken broth to a boil.
  • 4Add remaining oil and couscous.
  • 5Cover, remove from heat and let stand 5 minutes.
  • 6Toss together couscous, seasonings and vegetables and serve.
