Ingredients
- 2-3 tablespoons olive oil
- 1 - bell pepper( yellow green or orange) cored, seeded, chopped
- 1 - zucchini, sliced
- 1/2 cup sweet onion, thinly sliced
- 8 - stalks asparagus, cut into 1 inch spears
- 1/4 teaspoon crushed red pepper flake (optional)
- 1 dash salt and pepper
- 1 cup couscous
- 1 1/4 cups water or chicken broth
How To Make couscous primavera

Step 1In a medium skillet, heat 1-2 tablespoon oil over moderate heat.

Step 2Add pepper, zucchini, onion and asparagus and saute, stirring, for 5 minutes or until crisp-tender.

Step 3In a medium saucepan, bring 1-1/4 cups water or chicken broth to a boil.

Step 4Add remaining oil and couscous.

Step 5Cover, remove from heat and let stand 5 minutes.

Step 6Toss together couscous, seasonings and vegetables and serve.
