Ingredients

  • 2-3 tablespoons olive oil
  • 1 - bell pepper( yellow green or orange) cored, seeded, chopped
  • 1 - zucchini, sliced
  • 1/2 cup sweet onion, thinly sliced
  • 8 - stalks asparagus, cut into 1 inch spears
  • 1/4 teaspoon crushed red pepper flake (optional)
  • 1 dash salt and pepper
  • 1 cup couscous
  • 1 1/4 cups water or chicken broth

How To Make couscous primavera

  • Step 1
    In a medium skillet, heat 1-2 tablespoon oil over moderate heat.
  • Step 2
    Add pepper, zucchini, onion and asparagus and saute, stirring, for 5 minutes or until crisp-tender.
  • Step 3
    In a medium saucepan, bring 1-1/4 cups water or chicken broth to a boil.
  • Step 4
    Add remaining oil and couscous.
  • Step 5
    Cover, remove from heat and let stand 5 minutes.
  • Step 6
    Toss together couscous, seasonings and vegetables and serve.
