My youngest sons's two favorite vegetables are corn and broccoli so I am always on the lookout for new ways to prepare them. I'm not sure where I got this recipe but when I found it I just had to make it for him. It is now one of his favorites. He says its the best of both worlds. I hope you all will think so too!

Ingredients
- 2- 16 oz. cans cream-style corn
- 20 oz. packages frozen chopped broccoli
- 2 large eggs, well beaten
- 1 cup saltine cracker crumbs
- 2 tablespoons onion, minced
- 4 tablespoons butter, melted
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- TOPPING:
- 1/2 cup saltine cracker crumbs
- 2 tablespoons butter, melted
How To Make country corn bake

Step 1In a microwave, defrost broccoli for 10 minutes. Then cook on high for 5 minutes. Add corn, salt, pepper, eggs, cracker crumbs, onion, and melted butter to the broccoli and pour into a microwave safe casserole dish.

Step 2Mix the topping and sprinkle over ingredients. Cover with lid or plastic wrap and cook on high for 10 minutes. Uncover and cook an additional 1 minute and 40 seconds.
