country corn bake

My youngest sons's two favorite vegetables are corn and broccoli so I am always on the lookout for new ways to prepare them. I'm not sure where I got this recipe but when I found it I just had to make it for him. It is now one of his favorites. He says its the best of both worlds. I hope you all will think so too!

Ingredients For country corn bake

  • 2- 16 oz. can
    cream-style corn
  • 20 oz. pkg
    frozen chopped broccoli
  • 2 lg
    eggs, well beaten
  • 1 c
    saltine cracker crumbs
  • 2 Tbsp
    onion, minced
  • 4 Tbsp
    butter, melted
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • TOPPING:
  • 1/2 c
    saltine cracker crumbs
  • 2 Tbsp
    butter, melted

How To Make country corn bake

    In a microwave, defrost broccoli for 10 minutes. Then cook on high for 5 minutes. Add corn, salt, pepper, eggs, cracker crumbs, onion, and melted butter to the broccoli and pour into a microwave safe casserole dish.

    Mix the topping and sprinkle over ingredients. Cover with lid or plastic wrap and cook on high for 10 minutes. Uncover and cook an additional 1 minute and 40 seconds.
