    ears corn, sliced off
  • 1-2
    jalapenos, minced (seeded)
  • 1/2 c
    sliced scallions (about 3)
  • 1 c
  • 1 tsp
  • 1 1/2 tsp
    baking powder
  • 1/4 tsp
  • 1/2 tsp
  • 1/2 tsp
    garlic granules
  • 2
  • 1/2 c
  • 2 Tbsp
    melted butter
  • ·
    oil for frying

How to Make Corny Fritters


  1. place the corn, scallions and jalapenos in a bowl
  2. Put all the dry ingredients in a second bowl.
  3. Mix the butter, eggs and milk together.
  4. Add the flour to the milk mixture and then add the corn mix. Just mix until integrated.
  5. Spoon into hot oil and fry until brown, flip and continue until done. Cook in batches, placing cooked fritters on a cooling rack over paper towel lined baking sheet in a 200 degree oven to keep warm.
