Ingredients

  • 2 - ears corn, sliced off
  • 1-2 - jalapenos, minced (seeded)
  • 1/2 cup sliced scallions (about 3)
  • 1 cup flour
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic granules
  • 2 - eggs
  • 1/2 cup milk
  • 2 tablespoons melted butter
  • - oil for frying

How To Make corny fritters

  • Step 1
    place the corn, scallions and jalapenos in a bowl
  • Step 2
    Put all the dry ingredients in a second bowl.
  • Step 3
    Mix the butter, eggs and milk together.
  • Step 4
    Add the flour to the milk mixture and then add the corn mix. Just mix until integrated.
  • Step 5
    Spoon into hot oil and fry until brown, flip and continue until done. Cook in batches, placing cooked fritters on a cooling rack over paper towel lined baking sheet in a 200 degree oven to keep warm.
