corny fritters

Ingredients
- 2 - ears corn, sliced off
- 1-2 - jalapenos, minced (seeded)
- 1/2 cup sliced scallions (about 3)
- 1 cup flour
- 1 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon cayenne
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic granules
- 2 - eggs
- 1/2 cup milk
- 2 tablespoons melted butter
- - oil for frying
How To Make corny fritters

Step 1place the corn, scallions and jalapenos in a bowl

Step 2Put all the dry ingredients in a second bowl.

Step 3Mix the butter, eggs and milk together.

Step 4Add the flour to the milk mixture and then add the corn mix. Just mix until integrated.

Step 5Spoon into hot oil and fry until brown, flip and continue until done. Cook in batches, placing cooked fritters on a cooling rack over paper towel lined baking sheet in a 200 degree oven to keep warm.
