This was a recipe of Mark's Mom's. It was one of her favorites. She also added diced tomatoes also, because she liked them. Thank you Mark, for sharing part of your mom!

Ingredients
- 1 1/2 tablespoons oil
- 2 cups zucchini, cubed
- 1 1/2 cups corn kernels
- 1/3 teaspoon salt
- 1 small onion, cubed
- 1/4 teaspoon pepper
- 4 ounces shredded cheese
- 2 tablespoons bacon bits, optional

Step 1In large skillet, heat oil. Put zucchini, corn, onion in to skillet and cook about 10 min. Spoon out cooked vegetables into a serving dish. Sprinkle with cheese and bacon.
