corn with cream cheese & serrano chiles
Creamy and as spicy as you like! Measurements are approximate - more a technique than a recipe. I usually use just one whole serrano chile, depending on how spicy it is. Can also use jalapeno pepper if you can't find a serrano (but serrano tastes better!).

Ingredients
- 3 tablespoons unsalted butter
- 1 serrano chile, seeded and minced
- 2 1/2 cups frozen sweet corn
- 1/4 cup cream cheese, softened
- 1 tablespoon water or milk
- kosher salt, to taste
- black pepper, to taste
How To Make corn with cream cheese & serrano chiles

Step 1In a small saucepan, melt the butter. Add the minced serrano chile and saute for 1 minute.

Step 2Add the frozen corn and stir until coated with butter. Add the water or milk. Cover and cook over low heat for 5 minutes.

Step 3Meanwhile, cube the cream cheese. Add to the saucepan and stir to combine. Continue to cook over low/medium heat until cheese melts. Add a bit more water or milk if it is hard to stir.

Step 4Once the cheese has completely melted, add salt and freshly ground black pepper to taste. Serve immediately.
