Looks tame, but has a bit of a Latino bite! This one's always a hit at pitch-in dinners!

You can also add and/or substitute shredded potatoes, and/or chicken to make a full meal.

    cream (8 oz)
  • 1/4 c
  • 2 can(s)
    corn, drained (15 oz)
  • 1 can(s)
    diced chiles (4 oz)
  • 1 c
    cheddar cheese, shredded

How to Make Corn with a Kick


  1. Preheat oven to 375°F.
  2. In a medium saucepan over medium heat combine butter, cream cheese and milk; stir until smooth.
  3. In a 2-quart baking dish combine corn and jalapenos. Pour milk mixture over corn and sprinkle with cheddar cheese.
  4. Bake in preheated oven for 30 minutes.
