Another personal favorite of my sisters dishes. I make this every chance I get.

Ingredients

  • 2 - 15oz cans mexicorn, drained
  • 2 cups cheddar cheese, shredded
  • 1 cup mayonaise, i use hellman's
  • 1/4 cup red onion, chopped
  • 3 - 4 teaspoons chili powder
  • 1 - 10.5oz - bag fritos chili cheese corn chips, crushed lightly

How To Make corn salad

  • Step 1
    Combine the first five ingredients together. Chill until ready to serve. Just before serving, stir in the corn chips and enjoy.
  • Step 2
    Tip: I use the Mexican Shredded Cheese but any cheese will work. Use your better judgement on the red onion and chil powder, to your taste. The longer it sits in the fridge before serving, the better it tastes. Its delicious!
