My Mom used to make these...they look like silver dollar sized pancakes and are a great way to get the kids to eat vegetables. My kids are now college age and still ask for them all the time.

Ingredients
- 16 ounces corn, cream-style
- 1/4 teaspoon nutmeg
- 1 teaspoon baking powder
- 3/4 cup flour
- 4 - eggs
How To Make corn fritters

Step 1Mix all ingredients and drop by spoonfuls onto hot greased (margarine or butter flavored cooking spray is best) griddle. Turn over after 1-2 minutes when the edges start to bubble and cook an additional 30 seconds, just long enough to lighly brown them. Served best hot with just a bit of salt and butter.
