How to Make Corn Fritters with Salsa
1In a large bowl, mix flour, cornmeal, baking powder, sugar and salt; set aside.
In another bowl, whisk eggs with milk, melted butter, corn and green onions until mixed.
Add milk mixture to the flour mixture; stir just until dry ingredients are moistened.
2In large skillet, heat 1/4 cup oil over medium heat. Drop tablespoonfuls of batter into fryer; cook until golden on both sides, turning once. Add more oil to pan if necessary.
