Mom Curl (my wonderful mother-in-law) gave me this great recipe back in 1949! This is great along with fried fish. It can replace Hush Puppies! Children love it..you might have to make a double batch. Drained can corn can be used, but the fresh flavor is lacking. NOTE: Before the Civil War was two years old. Southerners were feeling the pinch of shortage, and were devising many new recipes as well as reviving old ones,, such as MOCK OYSTERS

- 6 - ears of sweet corn
- 1 - egg
- 2 tablespoons butter, melted
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 2/3 cup flour
How To Make corn fritters also known as "mock oysters"

Step 1Husk and silk 6 ears of sweet corn.With a sharp knife make cuts down through the center of each row of corn, scrape down the cob. In a bowl mix corn,egg and melted butter, salt and pepper. Stir inflour. In a heavy skillet pour in oil to depth of 1/2 inch. Heat oil. Carefully drop down the corn mixture with a Tablespoon into the hot oil. Fry till golden, turning once.
