Ingredients

  • 3
    ears corn
  • 1 c
    grated zucchini
  • 4 clove
    garlic minced
  • 2
    green onions chopped
  • 2 large
    eggs
  • 1/2 c
    buttermilk
  • 4 oz
    goat cheese
  • ·
    salt and pepper
  • 1 c
    flour
  • 1 tsp
    baking powder
  • ·
    oil for frying
  • 1/2 c
    honey
  • 1 tsp
    red pepper flakes

How to Make Corn Fritters

Step-by-Step

  1. Mix the honey and red pepper flakes together and set aside.
    Grill the corn to get a nice smoky char on them then cut the kernels off the cob.
  2. In a small bowl mix the flour and baking powder together.
    In a large bowl mix the corn kernels, zucchini, garlic, green onions, egg and the goat cheese together. Season with salt and pepper.
  3. Stir in the flour mixture. Add oil to a large skillet. Pour small amounts of batter onto hot pan. Cook 3 minutes per side to get them browned and cooked through.
  4. Serve drizzled with the honey mixture.
