Ingredients

  • 3 - ears corn
  • 1 cup grated zucchini
  • 4 cloves garlic minced
  • 2 - green onions chopped
  • 2 large eggs
  • 1/2 cup buttermilk
  • 4 ounces goat cheese
  • - salt and pepper
  • 1 cup flour
  • 1 teaspoon baking powder
  • - oil for frying
  • 1/2 cup honey
  • 1 teaspoon red pepper flakes

How To Make corn fritters

  • Step 1
    Mix the honey and red pepper flakes together and set aside. Grill the corn to get a nice smoky char on them then cut the kernels off the cob.
  • Step 2
    In a small bowl mix the flour and baking powder together. In a large bowl mix the corn kernels, zucchini, garlic, green onions, egg and the goat cheese together. Season with salt and pepper.
  • Step 3
    Stir in the flour mixture. Add oil to a large skillet. Pour small amounts of batter onto hot pan. Cook 3 minutes per side to get them browned and cooked through.
  • Step 4
    Serve drizzled with the honey mixture.
