Ingredients
- 3 - ears corn
- 1 cup grated zucchini
- 4 cloves garlic minced
- 2 - green onions chopped
- 2 large eggs
- 1/2 cup buttermilk
- 4 ounces goat cheese
- - salt and pepper
- 1 cup flour
- 1 teaspoon baking powder
- - oil for frying
- 1/2 cup honey
- 1 teaspoon red pepper flakes
How To Make corn fritters

Step 1Mix the honey and red pepper flakes together and set aside. Grill the corn to get a nice smoky char on them then cut the kernels off the cob.

Step 2In a small bowl mix the flour and baking powder together. In a large bowl mix the corn kernels, zucchini, garlic, green onions, egg and the goat cheese together. Season with salt and pepper.

Step 3Stir in the flour mixture. Add oil to a large skillet. Pour small amounts of batter onto hot pan. Cook 3 minutes per side to get them browned and cooked through.

Step 4Serve drizzled with the honey mixture.
