- 1/2 cup red bell pepper chopped
- 1/2 cup onion chopped finely
- 1 can whole corn and 1 creamed corn
- 1 PKG CORN MUFFIN MIX , 1/4 TSP BLACK PEPPER, COOKING SPRAY
How To Make corn fritter casserole

Step 1preheat oven to 375 degrees combine first 3 ingredients in a large bowl with whisk until smooth. stir in onion, bell pepper,both cans of corn and mix well.

Step 2add muffin mix and black pepper, stirring until well combined.

Step 3pour into 11 by 7 inch baking dish coated with cooking spray. bake at 375 degrees for 50 minutes
