corn casserole with bacon and jalapenos

I came up with this recipe for a Thanksgiving work potluck. Everyone wanted the recipe.

Ingredients

  • 1 package bacon
  • 4 cans corn - 29 oz each can
  • 2 cans creamed corn - 15 oz each can
  • 4 ounces diced jalapenos - not drained
  • 8 ounces cream cheese - cubed
  • 2 cups shredded mexican cheese blend
  • 1 cup milk
  • 1 box jiffy corn bread mix

How To Make corn casserole with bacon and jalapenos

  • Step 1
    In large pot cook bacon till crispy and then break into pcs. Set pcs aside.
  • Step 2
    Put all remaining ingredients into pot bacon was cooked in. Make sure to leave some of the bacon grease in the pan for flavor.
  • Step 3
    Mix all together and add bacon pcs. Cook till heated through and cheese is melted. Serve.
