  • 15 oz
    can creamed corn
  • 15 oz
    can whole kernel corn (do not drain)
  • 2 large
    eggs, beaten
  • 2 Tbsp
    granulated sugar
  • 1/3 c
    cornbread mix (packaged)
  • 1/4 c
    unsalted butter, metled
  • 2 large
    jalapeno peppers, seeded and minced
  • 1 c
    grated sharp cheddar cheese, divided

How to Make Corn Casserole


  1. Preheat oven to 350°F. Butter an 8x8-inch baking dish; set aside.
  2. Stir the corn, eggs, sugar, cornbread mix, melted butter, jalapenos, and1/2 cup of the cheese together in a large bowl. Transfer the mixture to the prepared baking dish.
  3. Bake for 40 minutes; sprinkle the remaining 1/2 cup of cheese on top and bake for 20 minutes longer.
  4. Allow to cool for 5 minutes in dish before serving.
