This is a great way to dress up corn.

Ingredients

  • 15 ounces can creamed corn
  • 15 ounces can whole kernel corn (do not drain)
  • 2 large eggs, beaten
  • 2 tablespoons granulated sugar
  • 1/3 cup cornbread mix (packaged)
  • 1/4 cup unsalted butter, metled
  • 2 large jalapeno peppers, seeded and minced
  • 1 cup grated sharp cheddar cheese, divided

How To Make corn casserole

  • Step 1
    Preheat oven to 350°F. Butter an 8x8-inch baking dish; set aside.
  • Step 2
    Stir the corn, eggs, sugar, cornbread mix, melted butter, jalapenos, and1/2 cup of the cheese together in a large bowl. Transfer the mixture to the prepared baking dish.
  • Step 3
    Bake for 40 minutes; sprinkle the remaining 1/2 cup of cheese on top and bake for 20 minutes longer.
  • Step 4
    Allow to cool for 5 minutes in dish before serving.
