One Thanksgiving that I worked in ICU at NMH, a nurse friend brought this to the dinner that we prepared. It was delicious and I had to have the recipe.

Ingredients
- 1 can cream style corn
- 1 can corn niblets, undrained
- 1 box jiffy corn muffin mix
- 8 ounces sour cream
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 2 - eggs, beaten
- 1 stick margarine, melted
- 16 ounces mild cheddar cheese
How To Make corn casserole

Step 1Melt margarine in a skillet.

Step 2In a small bowl, mix the sour cream, both corns, eggs, seasonings, and 1 cup of the shredded cheese.

Step 3Add margarine. Pour into a greased 13x9-inch pan. Top with remaining cheese. Bake, uncovered, at 350 degrees for 45 - 50 minutes. Let stand 10 minutes before serving.
