I use Green Giant "Mexi-corn" in place of regular kernel corn. It gives the casserole a little "kick," plus it add a little color!

Ingredients

  • 1 stick
    margarine (melted)
  • 1 box
    jiffy corn bread mix
  • 2
    eggs
  • 8 oz
    sour cream
  • 1 can(s)
    cream corn
  • 1 can(s)
    whole kernel corn

How to Make Corn Casserole

Step-by-Step

  1. Melt margarine in microwavable mixing bowl.
  2. Stir in corn bread mix, and stir until completely mixed.
  3. Add eggs, and blend well.
  4. Add corns, and stir in well.
  5. Add sour cream, and stir until cream.
  6. Place in 13 x 9 greased baking dish.
  7. Bake at 350 degrees for 35 - 45 minutes, or until casserole is lightly browned and set.
