I use Green Giant "Mexi-corn" in place of regular kernel corn. It gives the casserole a little "kick," plus it add a little color!

margarine (melted)
1 box
jiffy corn bread mix
8 oz
sour cream
1 can(s)
cream corn
1 can(s)
whole kernel corn

How to Make Corn Casserole


  • 1Melt margarine in microwavable mixing bowl.
  • 2Stir in corn bread mix, and stir until completely mixed.
  • 3Add eggs, and blend well.
  • 4Add corns, and stir in well.
  • 5Add sour cream, and stir until cream.
  • 6Place in 13 x 9 greased baking dish.
  • 7Bake at 350 degrees for 35 - 45 minutes, or until casserole is lightly browned and set.
