corn casserole

I use Green Giant "Mexi-corn" in place of regular kernel corn. It gives the casserole a little "kick," plus it add a little color!

Ingredients

  • 1 stick margarine (melted)
  • 1 box jiffy corn bread mix
  • 2 - eggs
  • 8 ounces sour cream
  • 1 can cream corn
  • 1 can whole kernel corn

How To Make corn casserole

  • Step 1
    Melt margarine in microwavable mixing bowl.
  • Step 2
    Stir in corn bread mix, and stir until completely mixed.
  • Step 3
    Add eggs, and blend well.
  • Step 4
    Add corns, and stir in well.
  • Step 5
    Add sour cream, and stir until cream.
  • Step 6
    Place in 13 x 9 greased baking dish.
  • Step 7
    Bake at 350 degrees for 35 - 45 minutes, or until casserole is lightly browned and set.
