Found in one of my Amish cookbooks.

Ingredients

  • 1 pound bacon
  • 1/2 cup margarine or butter
  • 1/2 - onion chopped
  • 1/2 cup celery chopped
  • 5 tablespoons all purpose flour
  • 2 cups sour cream
  • - kernels cut from 6 ears of corn
  • - salt and pepper
  • 1 tablespoon parsley minced

How To Make corn casserole

  • Step 1
    Preheat oven to 350 Butter a 9x13 inch baking pan.Cook the bacon in a large skillet until crisp.Transfer to paper towel to drain,then crumble & set aside.Melt the margarine in a large saucepan over medium heat.
  • Step 2
    Saut'e the onion & celery until soft.Stir in the flour,then the sour cream,until well combined.Add the corn and most of the bacon bits and season with salt& pepper to taste.
  • Step 3
    Pour into the prepared dish and sprinkle on remaining bacon bits and parsley.Bake until lightly browned 30-40 mins.
