Ingredients

  • 1 lb
    bacon
  • 1/2 c
    margarine or butter
  • 1/2
    onion chopped
  • 1/2 c
    celery chopped
  • 5 Tbsp
    all purpose flour
  • 2 c
    sour cream
  • ·
    kernels cut from 6 ears of corn
  • ·
    salt and pepper
  • 1 Tbsp
    parsley minced

How to Make Corn Casserole

Step-by-Step

  1. Preheat oven to 350 Butter a 9x13 inch baking pan.Cook the bacon in a large skillet until crisp.Transfer to paper towel to drain,then crumble & set aside.Melt the margarine in a large saucepan over medium heat.
  2. Saut'e the onion & celery until soft.Stir in the flour,then the sour cream,until well combined.Add the corn and most of the bacon bits and season with salt& pepper to taste.
  3. Pour into the prepared dish and sprinkle on remaining bacon bits and parsley.Bake until lightly browned 30-40 mins.
