An awesome side dish for a southern-style meal like fried chicken or country ham. You shouldn't use low or no-fat sour cream in this one; the casserole doesn't set if you do.

Ingredients For corn casserole

  • 1 can
    whole kernel corn, drained
  • 1 can
    creamed corn
  • 8 oz
    corn muffin mix, such as jiffy
  • 1 c
    sour cream
  • 1/2 c
    butter, melted
  • 1 1/2 c
    shredded cheddar cheese

How To Make corn casserole

  • 1
    Heat oven to 350 degrees. In a large bowl, combine everything but cheddar cheese, making sure that everything is well incorporated and that the corn muffin mix doesn't make clumps.

    Pour into a greased 9x13 casserole dish. Bake 45 minutes or until golden brown. Top with cheddar an return to oven for 5-10 minutes more until cheese is melted.
