An awesome side dish for a southern-style meal like fried chicken or country ham. You shouldn't use low or no-fat sour cream in this one; the casserole doesn't set if you do.

whole kernel corn, drained
1 can(s)
creamed corn
8 oz
corn muffin mix, such as jiffy
1 c
sour cream
1/2 c
butter, melted
1 1/2 c
shredded cheddar cheese

How to Make Corn Casserole


  • 1Heat oven to 350 degrees. In a large bowl, combine everything but cheddar cheese, making sure that everything is well incorporated and that the corn muffin mix doesn't make clumps.
  • 2Pour into a greased 9x13 casserole dish. Bake 45 minutes or until golden brown. Top with cheddar an return to oven for 5-10 minutes more until cheese is melted.
  • 3Let stand 5 minutes before serving.
