This is one of our favorite sides. My son loves it so much, he renamed it "Corny Corny Goodness!" And it tastes very similar to the corn cakes served at Don Pablo's Mexican Restaurant.

- 1 can whole kernel corn, drained
- 1 can cream-style corn
- 1 package jiffy corn muffin mix, 8-ounce
- 1 cup sour cream
- 1/2 cup butter, melted (1stick)
- 1 1/2 cups cheddar cheese, shredded
How To Make corn casserole

Step 1Preheat oven to 350 degrees. In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream and melted butter. Pour into a greased casserole dish. Bake for 45 minutes or until golden brown. Remove from oven and top with cheddar. Return to oven for 5-10 minutes, or until cheese is melted. Let stand for 5 minutes, then serve warm.
