Ingredients

4
ears fresh corn --- or --- 1 - 10oz. pkg. frozen whole kernel corn
1/4 c
butter or margarine
1/4 c
yellow onion, diced
1/4 c
green bell pepper, diced
2 tsp
sugar
1/2 tsp
salt
1/4 tsp
ground cumin
pinch
white pepper
1 large
tomato, large diced

How to Make Corn and Tomatoes

Step-by-Step

  • 1If using fresh corn: husk and remove silk, cut enough kernels from the ears to measure 2 cups. Add all other ingredients except tomato, stir and cook over medium heat until butter is melted.
  • 2Cover and cook over low heat 10 minutes more. Stir in tomatoes. Cover again and cook 5 minutes longer.
  • 3If using frozen corn, purchase corn without butter sauce and follow above directions.
