Ingredients

  • 4
    ears fresh corn --- or --- 1 - 10oz. pkg. frozen whole kernel corn
  • 1/4 c
    butter or margarine
  • 1/4 c
    yellow onion, diced
  • 1/4 c
    green bell pepper, diced
  • 2 tsp
    sugar
  • 1/2 tsp
    salt
  • 1/4 tsp
    ground cumin
  • pinch
    white pepper
  • 1 large
    tomato, large diced

How to Make Corn and Tomatoes

Step-by-Step

  1. If using fresh corn: husk and remove silk, cut enough kernels from the ears to measure 2 cups. Add all other ingredients except tomato, stir and cook over medium heat until butter is melted.
  2. Cover and cook over low heat 10 minutes more. Stir in tomatoes. Cover again and cook 5 minutes longer.
  3. If using frozen corn, purchase corn without butter sauce and follow above directions.
