Really southern and simple but good.

Ingredients

  • 4 - ears fresh corn --- or --- 1 - 10oz. pkg. frozen whole kernel corn
  • 1/4 cup butter or margarine
  • 1/4 cup yellow onion, diced
  • 1/4 cup green bell pepper, diced
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • pinch white pepper
  • 1 large tomato, large diced

How To Make corn and tomatoes

  • Step 1
    If using fresh corn: husk and remove silk, cut enough kernels from the ears to measure 2 cups. Add all other ingredients except tomato, stir and cook over medium heat until butter is melted.
  • Step 2
    Cover and cook over low heat 10 minutes more. Stir in tomatoes. Cover again and cook 5 minutes longer.
  • Step 3
    If using frozen corn, purchase corn without butter sauce and follow above directions.
