Ingredients
- 1 tablespoon butter
- 1 large onion, sliced
- 1 cup sour cream
- 1/4 teaspoon salt
- 1/2 tablespoon finely chopped parsley
- 1/2 cup cheddar cheese, shredded
- 8.5 ounces corn muffin, mix
- 1 - egg, beaten
- 1/3 cup milk
- 16 ounces cream-style corn
- 2 dashes hot sauce
- 1 cup cheddar cheese, shredded
How To Make corn and onion casserole

Step 1Melt the butter in a skillet and saute the onions until tender.

Step 2In a bowl combine the sour cream, salt, parsley and 1/2 cup cheese.

Step 3Combine and add to the onion mixture and set aside.

Step 4Combine the muffin mix, egg, milk, corn and hot sauce and mix well.

Step 5Spread in a greased 9 x 9 inch pan.

Step 6Cover with the sour cream mixture.

Step 7Top with the remaining cheese.

Step 8Bake in a 425 degree oven for 25 to 30 minutes.
