Corn and Macaroni Casserole

This is just a good side dish with many diferent meats. Add a green salad and you have a meal!

1 can(s)
whole kernel corn and juice
1 can(s)
cream style corn
1 can(s)
small can, chopped green chilis (opt.)
1 small
onion, chopped
1/2 c
chopped red or green bell pepper
1 stick
butter or margarine
8 oz
processed cheese, cubed
1/4 c
evaporated milk
1 c
elbow macaroni, dry
salt and pepper to taste


1Mix together corn, onion, pepper, chilis (opt.) and dry macaroni. Slice butter into the mixture along with the cheese. Add milk. Add seasoning to your liking. Pour into a greased casserole dish with a lid.
2Cover and bake at 350 degrees for 30 minutes. Remove lid and stir. Add more milk if mixture seems dry.
3Continue baking, uncovered, for another 30 minutes until top is a little browned and macaroni is tender. If mixture seems too dry, add more milk. Some corn has more liquid than others. Let set a few minutes, covered, and serve.
