This is just a good side dish with many diferent meats. Add a green salad and you have a meal!

Ingredients

  • 1 can whole kernel corn and juice
  • 1 can cream style corn
  • 1 can small can, chopped green chilis (opt.)
  • 1 small onion, chopped
  • 1/2 cup chopped red or green bell pepper
  • 1 stick butter or margarine
  • 8 ounces processed cheese, cubed
  • 1/4 cup evaporated milk
  • 1 cup elbow macaroni, dry
  • - salt and pepper to taste

How To Make corn and macaroni casserole

  • Step 1
    Mix together corn, onion, pepper, chilis (opt.) and dry macaroni. Slice butter into the mixture along with the cheese. Add milk. Add seasoning to your liking. Pour into a greased casserole dish with a lid.
  • Step 2
    Cover and bake at 350 degrees for 30 minutes. Remove lid and stir. Add more milk if mixture seems dry.
  • Step 3
    Continue baking, uncovered, for another 30 minutes until top is a little browned and macaroni is tender. If mixture seems too dry, add more milk. Some corn has more liquid than others. Let set a few minutes, covered, and serve.
