Ingredients
- 6 slices bacon
- 1/2 cup chopped onion
- 2 tablespoons all-purpose flour
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup sour cream
- 3 1/2 cups corn
- 1 tablespoon chopped fresh parsley
- 1/2 cup half and half
- 1 tablespoon snipped fresh chives
How To Make corn and bacon casserole

Step 1Preheat oven to 350 degrees F. In a large skillet, cook the bacon until crisp. Drain, reserving 2 tablespoons of the drippings. Crumble the bacon and set aside.

Step 2Add the onion to the drippings and saute until tender.

Step 3Add the flour, garlic, salt, and pepper. Stir and cook until bubbly. Continue to stir and cook for 1 minute more.

Step 4Remove pan from the heat and stir in sour cream until smooth.

Step 5Add the corn, parsley, and half of the bacon. Mix well.

Step 6Add the half and half and stir. Return pan to the heat and cook until the corn is cooked and the mixture thickens up. Pour mixture into a 1-quart baking dish.

Step 7Bake for 20-25 minutes. Sprinkle with remaining bacon and chives.
