    sliced carrots, drained
  • 1 c
    green peppers, diced
  • 1
    red onion, diced
  • 1 c
    celery, diced
  • 1 c
  • 1 can(s)
    tomato soup
  • 1/2 c
  • 1/2 c
    canola or corn oil
  • ·
    salt and pepper to taste

How to Make Copper Pennies


  1. Place in a large bowl the carrots, peppers, onion and celery.
  2. Mix soup, sugar, vinegar and oil together. Pour over veggies. Salt and pepper to taste.
  3. Refrigerate for several hours or overnight.
