Ingredients

  • 2 cans sliced carrots, drained
  • 1 cup green peppers, diced
  • 1 - red onion, diced
  • 1 cup celery, diced
  • 1 cup sugar
  • 1 can tomato soup
  • 1/2 cup vinegar
  • 1/2 cup canola or corn oil
  • - salt and pepper to taste

How To Make copper pennies

  • Step 1
    Place in a large bowl the carrots, peppers, onion and celery.
  • Step 2
    Mix soup, sugar, vinegar and oil together. Pour over veggies. Salt and pepper to taste.
  • Step 3
    Refrigerate for several hours or overnight.
