Cooked Escarole

I can't remember which food network show I got this idea from. I am sure this is not the exact recipe,in fact it may not be even close but this dish turned out very tasty and will become a part of our monthly recipes.

  • 3 slice
  • 1
    head of escarole
  • 1/8 c
    granulated sugar
  • 1/4 c
    give or take an inch cider vinagar
  • 1or2 Tbsp
    red pepper flakes

How to Make Cooked Escarole


  1. cook bacon in heavy skillet
  2. drain all but 3 tbsp of fat from pan.
  3. reheat the 3 tbsp of fat,add sugar and cook to smooth and bubbly
  4. VERY CAREFULLY add vinegar to pan whisk until smooth.
  5. Add Escarole,crumbled bacon and pepper flakes.
  6. cook till lettuce JUST starts to wilt, remove from heat
  7. serve hot
