cooked escarole

I can't remember which food network show I got this idea from. I am sure this is not the exact recipe,in fact it may not be even close but this dish turned out very tasty and will become a part of our monthly recipes.

Ingredients

  • 3 slices bacon
  • 1 - head of escarole
  • 1/8 cup granulated sugar
  • 1/4 cup give or take an inch cider vinagar
  • 1or2 tablespoon red pepper flakes

How To Make cooked escarole

  • Step 1
    cook bacon in heavy skillet
  • Step 2
    drain all but 3 tbsp of fat from pan.
  • Step 3
    reheat the 3 tbsp of fat,add sugar and cook to smooth and bubbly
  • Step 4
    VERY CAREFULLY add vinegar to pan whisk until smooth.
  • Step 5
    Add Escarole,crumbled bacon and pepper flakes.
  • Step 6
    cook till lettuce JUST starts to wilt, remove from heat
  • Step 7
    serve hot
