cooked escarole
I can't remember which food network show I got this idea from. I am sure this is not the exact recipe,in fact it may not be even close but this dish turned out very tasty and will become a part of our monthly recipes.

Ingredients
- 3 slices bacon
- 1 - head of escarole
- 1/8 cup granulated sugar
- 1/4 cup give or take an inch cider vinagar
- 1or2 tablespoon red pepper flakes
How To Make cooked escarole

Step 1cook bacon in heavy skillet

Step 2drain all but 3 tbsp of fat from pan.

Step 3reheat the 3 tbsp of fat,add sugar and cook to smooth and bubbly

Step 4VERY CAREFULLY add vinegar to pan whisk until smooth.

Step 5Add Escarole,crumbled bacon and pepper flakes.

Step 6cook till lettuce JUST starts to wilt, remove from heat

Step 7serve hot
