How to Make Cooked Escarole
- 1cook bacon in heavy skillet
- 2drain all but 3 tbsp of fat from pan.
- 3reheat the 3 tbsp of fat,add sugar and cook to smooth and bubbly
- 4VERY CAREFULLY add vinegar to pan whisk until smooth.
- 5Add Escarole,crumbled bacon and pepper flakes.
- 6cook till lettuce JUST starts to wilt, remove from heat
- 7serve hot
