How to Make Cooked Escarole
- cook bacon in heavy skillet
- drain all but 3 tbsp of fat from pan.
- reheat the 3 tbsp of fat,add sugar and cook to smooth and bubbly
- VERY CAREFULLY add vinegar to pan whisk until smooth.
- Add Escarole,crumbled bacon and pepper flakes.
- cook till lettuce JUST starts to wilt, remove from heat
- serve hot
