My family LOVES this dish! Lots of prep, but worth every minute!

Ingredients

  • 1 large cauliflower, small florets
  • 1/3 cup green bell pepper
  • 1/3 cup orange bell pepper
  • 1/3 cup yellow bell pepper
  • 1 cup diced onion
  • 1 package raw mushrooms, rough chopped
  • 1 jar pimento (small jar) diced
  • 1 bunch green onion diced
  • 1/4 cup butter
  • 1/3 cup all purpose flour
  • 2 cups milk
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 cup velveeta cheese shredded or a mix of cheddar & swiss shredded

How To Make company's coming cauliflower!

  • Step 1
    Cook cauliflower in boiling, salted water until barely tender, Drain
  • Step 2
    While cauliflower cooks, drain the pimiento & dice, dice green onion, mix together & set aside.
  • Step 3
    In a large skillet saute onion, mushrooms and peppers in butter until tender.
  • Step 4
    Blend in flour, cook until bubbly, then gradually stir in milk, cook until thickened
  • Step 5
    stir in salt, cayenne & cheese. Cook until cheese is melted.
  • Step 6
    in a 2qt. casserole place 1/2 of cauliflower, pour in 1/2 of sauce, repeat. Cook 30 minutes or until bubbly
  • Step 7
    Sprinkle green onion and pimiento mix over the top. Serve! Good left over but does not freeze well.
