Ingredients
- 1 large cauliflower, small florets
- 1/3 cup green bell pepper
- 1/3 cup orange bell pepper
- 1/3 cup yellow bell pepper
- 1 cup diced onion
- 1 package raw mushrooms, rough chopped
- 1 jar pimento (small jar) diced
- 1 bunch green onion diced
- 1/4 cup butter
- 1/3 cup all purpose flour
- 2 cups milk
- 1/4 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 cup velveeta cheese shredded or a mix of cheddar & swiss shredded

Step 1Cook cauliflower in boiling, salted water until barely tender, Drain

Step 2While cauliflower cooks, drain the pimiento & dice, dice green onion, mix together & set aside.

Step 3In a large skillet saute onion, mushrooms and peppers in butter until tender.

Step 4Blend in flour, cook until bubbly, then gradually stir in milk, cook until thickened

Step 5stir in salt, cayenne & cheese. Cook until cheese is melted.

Step 6in a 2qt. casserole place 1/2 of cauliflower, pour in 1/2 of sauce, repeat. Cook 30 minutes or until bubbly

Step 7Sprinkle green onion and pimiento mix over the top. Serve! Good left over but does not freeze well.
