Ingredients For company's coming cauliflower!

1 lgcauliflower, small florets
-
1/3 cgreen bell pepper
-
1/3 corange bell pepper
-
1/3 cyellow bell pepper
-
1 cdiced onion
-
1 pkgraw mushrooms, rough chopped
-
1 jarpimento (small jar) diced
-
1 bunchgreen onion diced
-
1/4 cbutter
-
1/3 call purpose flour
-
2 cmilk
-
1/4 tspcayenne pepper
-
1 tspsalt
-
1 cvelveeta cheese shredded or a mix of cheddar & swiss shredded
How To Make company's coming cauliflower!

1Cook cauliflower in boiling, salted water until barely tender, Drain

2While cauliflower cooks, drain the pimiento & dice, dice green onion, mix together & set aside.

3In a large skillet saute onion, mushrooms and peppers in butter until tender.

4Blend in flour, cook until bubbly, then gradually stir in milk, cook until thickened
-
5stir in salt, cayenne & cheese. Cook until cheese is melted.

6in a 2qt. casserole place 1/2 of cauliflower, pour in 1/2 of sauce, repeat. Cook 30 minutes or until bubbly

7Sprinkle green onion and pimiento mix over the top. Serve! Good left over but does not freeze well.
