comfortable yams (or carrots, squash)

This recipe came from my brain several years ago, and it's earned raves from most everyone who's tried it ever since... hope you agree!

Ingredients

  • 4 large cans yams or carrots
  • 1 cup dark brown sugar
  • 1 stick butter, unsalted
  • 2 ounces southern comfort
  • 1 cup ginger ale
  • 1/4 teaspoon cinnamon, ground
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon allspice, ground
  • 1/4 teaspoon ginger, ground
  • 1/4 teaspoon mace, ground
  • 1/4 teaspoon cardamom, ground
  • 1/4 teaspoon cloves, ground
  • 1/4 teaspoon white pepper, ground
  • 1/4 teaspoon sea salt, fine
  • 1/4 teaspoon orange zest
  • 1/8 teaspoon cumin, ground

How To Make comfortable yams (or carrots, squash)

  • Step 1
    Drain yams or carrots, pour into microwave safe bowl or large casserole dish. Of course, you can use fresh veggies - just roast and peel them as you normally would first!
  • Step 2
    Combine vanilla, ginger ale and Southern Comfort.
  • Step 3
    Combine all dry ingredients.
  • Step 4
    Add dry ingredients to liquid, mix until dissolved.
  • Step 5
    Cut butter into cubes and distribute evenly over yams or carrots.
  • Step 6
    Pour mixture over yams or carrots, fold to coat.
  • Step 7
    Bake at 350 degrees 30 minutes or microwave on high for 10 minutes until bubbling.
  • Step 8
    Let stand a few minutes before serving. Can top with mini-marshmallows if desired.
  • Step 9
    The sauce is more versatile than I thought. Recently I've discovered it's fantastic as an addition to barbeque sauce, a dipping sauce, some pie recipes (awesome with pumpkin), a glaze for some meats and it will also work with other veggies. Be adventurous!
