My local grocery deli sells this for $7.00/lb! So of course I had to come up with my own recipe. We love it as a side dish with a great grilled steak or like a dip. Mix it with a little cottage cheese and dip with potato chips...any way you eat it, its great!

Ingredients

  • 3 cans black eyed peas-drained and lightly rinsed
  • 1 - medium jalapeño pepper, seeded and finely chopped
  • 1 tablespoon dehydrated chopped garlic-or fresh, your choice
  • 1 can diced tomatoes with jalapeños
  • 1 bunch green onions, chopped
  • 1 tablespoon dehydrated mexican oregano
  • 1/2 cup your favorite italian salad dressing
  • - salt and pepper to taste

How To Make colorado caviar

  • Step 1
    Mix all ingredients, chill for at least 1 hour and serve.
  • Step 2
    As with most things, the longer it sits the better it tastes. Store in air tight container. Not sure how long it will store for, in our house this recipe doesn't last longer than a couple of days. LOL. Enjoy!
