Instead of using pork,try cooking greens with smoked turkey for a smoky flavor. I like to add vinegar at the end of cooking for a kick.

Ingredients

  • - 1 tablespoon butter
  • - 3 tablespoons oil
  • - 2 onions,chopped
  • - 6-8 bunches collard greens,washed well and chopped
  • - 6 cloves garlic,chopped
  • - 1 smoked turkey wing
  • - 1 t. crushed red pepper,or to taste
  • - ground black pepper to taste
  • - chicken broth
  • - water
  • - 1 tablespoon cider vinegar

How To Make collards with smoked turkey

  • Step 1
    Melt butter in a large pan,add oil. Saute onions and garlic until soft,add greens and turkey wing. Add red pepper and black pepper. Stir well to coat greens with oil and butter. Add chicken broth and enough water to cover. Simmer until greens are tender,may need to add additional water as the liquid cooks away. Add vinegar,stir well.
