Ingredients

  • 1 Tbsp
    butter
  • 1 c
    uncooked white rice, (jasmine is good)
  • 1 can(s)
    lite coconut milk + enough 1% milk to make 2 cups liquid
  • 1 box
    sugar snap peas thawed
  • ·
    chopped tomato

How to Make Coconut Rice with Snap Peas

Step-by-Step

  1. Heat butter and add rice, salt & pepper and toast the rice grains in butter about 2 min.
  2. Add the 2 cups liquid to rice & cook until tender.
  3. Heat snap peas in microwave until warmed through. No need to cook them any longer if you want them to remain snappy.
  4. When rice is done, fold in snap peas and chopped tomatoes. Serve immediately.
