Ingredients
- 1 tablespoon butter
- 1 cup uncooked white rice, (jasmine is good)
- 1 can lite coconut milk + enough 1% milk to make 2 cups liquid
- 1 box sugar snap peas thawed
- - chopped tomato
How To Make coconut rice with snap peas

Step 1Heat butter and add rice, salt & pepper and toast the rice grains in butter about 2 min.

Step 2Add the 2 cups liquid to rice & cook until tender.

Step 3Heat snap peas in microwave until warmed through. No need to cook them any longer if you want them to remain snappy.

Step 4When rice is done, fold in snap peas and chopped tomatoes. Serve immediately.
