How to Make Coconut Rice with Snap Peas
- Heat butter and add rice, salt & pepper and toast the rice grains in butter about 2 min.
- Add the 2 cups liquid to rice & cook until tender.
- Heat snap peas in microwave until warmed through. No need to cook them any longer if you want them to remain snappy.
- When rice is done, fold in snap peas and chopped tomatoes. Serve immediately.
