Ingredients

  • 1 tablespoon butter
  • 1 cup uncooked white rice, (jasmine is good)
  • 1 can lite coconut milk + enough 1% milk to make 2 cups liquid
  • 1 box sugar snap peas thawed
  • - chopped tomato

How To Make coconut rice with snap peas

  • Step 1
    Heat butter and add rice, salt & pepper and toast the rice grains in butter about 2 min.
  • Step 2
    Add the 2 cups liquid to rice & cook until tender.
  • Step 3
    Heat snap peas in microwave until warmed through. No need to cook them any longer if you want them to remain snappy.
  • Step 4
    When rice is done, fold in snap peas and chopped tomatoes. Serve immediately.
