- 6 - ears of corn
- 1/2 cup roasted/chopped anaheim pepper
- 1/2 cup roasted/chopped red bell pepper
- 1/4 cup salsa verde
- 2 cups white melting cheese, grated
- 1 teaspoon mccormicks bacon & chives, opt
- - salt & pepper to taste
How To Make cheesy southern corn casserole

Step 1Remove corn from cob, mix with roasted, chopped peppers, salsa and seasonings and mix together well. Add cheese and mix to combine. Suggestions for cheese would be Monterey Jack or Asadero.

Step 2Bake 350º for 25-30 min.
