Ingredients
- 2 pounds carrots, peeled and sliced into rounds
- 8 ounces velveeta cheese
- 1 stick butter (divided)
- 1/2 medium onion, chopped
- 1 cup ritz crackers, crushed
- 1/2 teaspoon dill weed
How To Make cheesy carrots

Step 1Preheat oven to 350 degrees.

Step 2Microwave the carrots for 3-4 minutes to partially cook them.

Step 3Saute the onion in half of the butter until transparent.

Step 4Cut the cheese into cubes and add to warm carrots along with sautéed onions.

Step 5Add the dill weed and mix well.

Step 6Melt remaining butter and add it to the crushed crackers. Sprinkle on top of carrots.

Step 7Bake for 30 -35 minutes or until crackers crumbs are lightly browned and crispy.
