This is my favorite eggplant recipe next to eggplant parmesan. So easy to make and so delicious! Great side dish to any roast.

Ingredients
- 1 large eggplant, peeled and diced
- 1 medium onion, sliced
- 1 teaspoon worcestershire sauce
- 1 clove garlic, minced
- 10 - saltine crackers, crushed
- 1/2 cup light cream
- 1/2 cup shredded cheddar cheese
- 1 tablespoon butter
- - salt & pepper to taste
- 1/4 cup breadcrumbs
How To Make cheesy baked eggplant

Step 1Bring small amount of salted water to boil in saucepan and add eggplant and onions. Boil until tender, about 5 min. Drain and put in buttered casserole.

Step 2Add cheese, worcestershire, garlic, crackers, cream. Add salt and pepper to taste.

Step 3Dot casserole with butter and top with bread crumbs. Bake at 350 for 15-20 minutes.
