This is my favorite eggplant recipe next to eggplant parmesan. So easy to make and so delicious! Great side dish to any roast.

Ingredients

1 large
eggplant, peeled and diced
1 medium
onion, sliced
1 tsp
worcestershire sauce
1 clove
garlic, minced
10
saltine crackers, crushed
1/2 c
light cream
1/2 c
shredded cheddar cheese
1 Tbsp
butter
salt & pepper to taste
1/4 c
breadcrumbs

How to Make Cheesy Baked Eggplant

Step-by-Step

  • 1Bring small amount of salted water to boil in saucepan and add eggplant and onions. Boil until tender, about 5 min. Drain and put in buttered casserole.
  • 2Add cheese, worcestershire, garlic, crackers, cream. Add salt and pepper to taste.
  • 3Dot casserole with butter and top with bread crumbs. Bake at 350 for 15-20 minutes.
