Ingredients

  • 1 head cauliflower
  • 4 tablespoons olive oil
  • salt, to taste
  • pepper, to taste
  • smoked paprika, to taste
  • ground coriander, to taste
  • 1 tablespoon roasted garlic confit
  • 1 cup shredded sharp cheddar cheese
  • PARMESAN CRUMB
  • 1 tablespoon packed Parmesan cheese
  • 2 tablespoons Panko bread crumbs
  • 1 teaspoon olive oil
  • 2 teaspoons minced parsley

How To Make cheese cauliflower steaks

  • Step 1
    Trim the leaves from the bottom of the cauliflower. Cut two nice-sized steaks out of the middle of the head. Place the steaks on a parchment-lined baking sheet. The rest of the cauliflower is saved for another use.
  • Step 2
    Mix the ground spices. Drizzle the olive oil over the steaks and season with the spices on both sides. Spread the garlic confit on each side.
  • Step 3
    Preheat oven to 450 degrees F. Place the cauliflower in the oven and roast for 15 minutes.
  • Step 4
    Turn the cauliflower and roast another 10 minutes.
  • Step 5
    Meanwhile, mix the Parmesan and Panko. Add the olive oil to a small saucepan. Add the Parmesan Panko mixture and cook until browned. Set aside to cool, then stir in the parsley.
  • Step 6
    Remove the cauliflower from the oven and turn the oven down to 400 degrees F.
  • Step 7
    Add the cheese and place it back in the oven, and bake until the cheese is melted. Top with the Parmesan crumb.
