Ingredients
- 1 head cauliflower
- 4 tablespoons olive oil
- salt, to taste
- pepper, to taste
- smoked paprika, to taste
- ground coriander, to taste
- 1 tablespoon roasted garlic confit
- 1 cup shredded sharp cheddar cheese
- PARMESAN CRUMB
- 1 tablespoon packed Parmesan cheese
- 2 tablespoons Panko bread crumbs
- 1 teaspoon olive oil
- 2 teaspoons minced parsley
How To Make cheese cauliflower steaks

Step 1Trim the leaves from the bottom of the cauliflower. Cut two nice-sized steaks out of the middle of the head. Place the steaks on a parchment-lined baking sheet. The rest of the cauliflower is saved for another use.

Step 2Mix the ground spices. Drizzle the olive oil over the steaks and season with the spices on both sides. Spread the garlic confit on each side.

Step 3Preheat oven to 450 degrees F. Place the cauliflower in the oven and roast for 15 minutes.

Step 4Turn the cauliflower and roast another 10 minutes.

Step 5Meanwhile, mix the Parmesan and Panko. Add the olive oil to a small saucepan. Add the Parmesan Panko mixture and cook until browned. Set aside to cool, then stir in the parsley.

Step 6Remove the cauliflower from the oven and turn the oven down to 400 degrees F.

Step 7Add the cheese and place it back in the oven, and bake until the cheese is melted. Top with the Parmesan crumb.
