1Cut each tomato into 8 equal wedges and Place in serving bowl. Chill thoroughly.
2Heat oil in heavy iron skillet til oil smokes. Add peppers and stir rapidly til covered with gray spots. Pour vinegar and sugar over peppers and continue cooking a few seconds til sugar dissolves and bubbles. Stir in cornstarch as soon as liquid thickens, pour over cold tomatoes and over cold tomatoes and serve at once. Serves 4 to 6
