Ingredients
- 1 bunch - celery, sliced
- 1 teaspoon salt
- - water, enough to cover
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 teaspoon nutmeg
- 1/4 teaspoon black pepper
- 2 cups milk
- 1/2 cup bread crumbs
- 3 tablespoons parmesan cheese
- 3 tablespoons scallions, chopped (both whites & greens)
- 2 tablespoons parsley flakes
How To Make celery gratin

Step 1Combine celery, salt & water to cover in a medium skillet. Bring to a boil; reduce the heat to medium low & cook until most of the liquid is absorbed. Push the celery to one side of the skillet.

Step 2Add butter, flour, nutmeg & pepper to the other side; cook, stirring, 3 minutes. Add milk; cook, stirring all of the ingredients together, until creamy. Season with salt & pepper.

Step 3In a bowl mix breadcrumbs, parmesan, scallions & parsley; sprinkle over the celery mixture & broil until golden.
