Cauliflower is such an unsung hero of the vegetable family -- this dish takes it to another level. Cook time includes time to prepare the cauliflower -- I prefer to steam it.

Ingredients

  • 4 tablespoons butter
  • 1 onion, chopped
  • 1/2 green bell pepper, chopped
  • 2 tablespoons flour
  • 2 cups cooked tomatoes, mashed (can use canned)
  • salt & pepper
  • 1/2 cup grated cheese
  • 3 cups cooked cauliflower

How To Make cauliflower with a creole touch

  • Step 1
    Brown the onion and green pepper in butter. Blend in the flour and add tomatoes and seasonings. Cook 3 minutes, stirring constantly.
  • Step 2
    Add the cooked cauliflower to the onion mixture and heat.
  • Step 3
    Place in a prepared casserole and cover with cheese. Bake at 350 degrees until bubbly and cheese is melted.
