Ingredients
- FOR THE PESTO
- 1/4 cup each fresh parsley and cilantro chopped
- 1 tablespoon drained capers
- 1/2 cup chopped sweet pickles
- 2 cloves garlic minced
- 1 tablespoon each dijon mustard, whole grain mustard, olive oil, lemon juice and grated parmesan cheese
- 1 teaspoon white wine vinegar
- FOR THE CAULIFLOWER STEAKS
- 2 heads cauliflower
- salt and pepper
- 2 tablespoons coconut oil
- 1/2 cup dry white wine
- 1 teaspoon lemon zest
How To Make cauliflower steaks with sweet pickle pesto

Step 1Place all ingredients for pesto in a food processor and process until well mixed. Place in fridge and let the flavors develop

Step 2Cut the cauliflower into 1 inch slices all the way down from top of head through the stalk. Season both sides with salt and pepper.

Step 3Place the coconut oil in a large skillet. Add the cauliflower and sear over med heat for 5 minutes each side. Pour in the wine and let all of the wine evaporate.

Step 4Serve the cauliflower steaks with the pesto and lemon zest.
