Ingredients
- CHIMICHURRI SAUCE
- 2 cups packed parsley
- 4 cloves garlic
- 1 medium shallot
- 1/2 cup olive oil
- 1/3 cup red wine vinegar
- salt
- STEAKS
- 1 large head cauliflower
- 3 tablespoons olive oil
- salt and pepper
How To Make cauliflower steaks with chimichurri sauce

Step 1For the cauliflower steaks. Remove the green leaves from the bottom of the cauliflower leaving the stem intact. Cut from the cauliflower in half then make 1 steak out of each half cutting straight down into the stem about 1 1/2 inch thick. Use the remaining cauliflower for another use.

Step 2Heat the oven 400 degrees. On stove top add the oil to a oven safe skillet. Season the cauliflower with salt and pepper. Cook in the hot oil until browned on both side. Transfer to the oven and roast until a fork goes through easily. About 10 minutes.

Step 3Meanwhile make the sauce. Add the garlic, shallot and parsley to a food processor. Pulse then scrap the sides and add the olive oil and red vinegar. Pulse a few more time to get to come together. Taste and add salt.

Step 4Serve the cauliflower steaks with the sauce.
