I was craving Biriyani, and came up with this quick, SCD compliant, no grain, healthy recipe to satisfy my craving. It is delicious and quickly became an easy-to-make, go-to recipe enjoyed at my house. If you are sensitive to nightshades, the cayenne can be left out. I have also tested leaving out both the cayenne and garlic, and it is still tasty enough!

Ingredients

  • CAULIFLOWER RICE
  • extra virgin olive oil
  • 1-2 teaspoon whole cumin seeds
  • 2 pounds frozen cauliflower rice
  • 2 tablespoons garlic paste
  • 1/4 cup lime juice
  • VINDALOO AND BIRIYANI SPICE MIX
  • 1 teaspoon ground cumin seeds
  • 1 teaspoon ground turmeric
  • 1/3 teaspoon cayenne
  • 2/3 teaspoon salt
  • TO SERVE:
  • torn “spring mix” salad greens
  • cooked chicken breast (I prefer marinated with lemon, olive oil, marjoram, salt, garlic powder, and onion powder)
  • raisins, chopped pears, or other fruit to add sweetness
  • optional peas

How To Make cauliflower rice biriyani

  • Step 1
    To make the cauliflower rice, coat the bottom of a large pan with a generous helping of olive oil.
  • Step 2
    Add the cumin seeds and then the frozen cauliflower rice. Cook over medium heat until the cauliflower rice is defrosted.
  • Step 3
    Meanwhile, make the Vindaloo and Biriyani spice mix by adding all the ingredients to a small bowl and stirring to combine.
  • Step 4
    Add the garlic paste, Vindaloo and Biriyani spice mix, and lime juice to the cauliflower rice. Finish warming and cooking, then turn off the heat.
  • Step 5
    Place the warm mixture in individual serving bowls, then add the toppings and mix together before enjoying.
  • Step 6
    I store the leftover seasoned cauliflower rice in the fridge and heat up individual servings in the microwave, then top with fresh toppings.

    Note 1: We always have both yogurt marinated and lemon marinated cooked chicken breast on hand. I prefer this recipe with the extra zing of the lemon marinated chicken breast.
