Wanting my kids to eat well I just love finding ways to sneak vegetables in meals. The sauce is good enough to ladle into a cup and drink by itself. Hope you enjoy!

  • 1
    head cauliflower head, in florets or chopped
  • 1/2 lb
    whole wheat rotini or macaroni pasta
  • 2 Tbsp
  • 1/4 c
  • 1 1/2 c
  • 1 c
    chicken broth
  • 2 c
    shredded cheddar
  • 1 Tbsp
    mustard (optional)

How to Make Cauliflower Macaroni & Cheese


  1. Cook pasta al dente, adding cauliflower during last 3-5 minutes or so. Drain.
  2. Whisk flour into melted butter in a small saucepan for 1 minute then whisk in broth until smooth.
  3. Whisk in the milk & simmer until thickened, between 3-5 minutes. Stand with it & whisk occasionally.
  4. Stir in cheese & mustard. Add pepper to taste.
  5. Stir sauce into cauliflower & pasta.
  6. Optional: This can be baked in a greased baking dish with extra cheddar cheese sprinkled on top.
