cauliflower macaroni & cheese
Wanting my kids to eat well I just love finding ways to sneak vegetables in meals. The sauce is good enough to ladle into a cup and drink by itself. Hope you enjoy!

Ingredients
- 1 - head cauliflower head, in florets or chopped
- 1/2 pound whole wheat rotini or macaroni pasta
- 2 tablespoons butter
- 1/4 cup flour
- 1 1/2 cups milk
- 1 cup chicken broth
- 2 cups shredded cheddar
- 1 tablespoon mustard (optional)
How To Make cauliflower macaroni & cheese

Step 1Cook pasta al dente, adding cauliflower during last 3-5 minutes or so. Drain.

Step 2Whisk flour into melted butter in a small saucepan for 1 minute then whisk in broth until smooth.

Step 3Whisk in the milk & simmer until thickened, between 3-5 minutes. Stand with it & whisk occasionally.

Step 4Stir in cheese & mustard. Add pepper to taste.

Step 5Stir sauce into cauliflower & pasta.

Step 6Optional: This can be baked in a greased baking dish with extra cheddar cheese sprinkled on top.
