Ingredients
- 2 tablespoons butter
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 medium carrot, sliced
- 1 head cauliflower, broken into florets
- 2 1/2 cups hard apple cider
- 2 tablespoons chicken bouillon
- 1/2 cup milk
- 1/2 cup heavy cream
- salt and pepper, to taste
- chives, to garnish
How To Make cauliflower hard cider porridge

Step 1Add the butter to a large Dutch oven over medium-high heat. Add the onion and garlic and cook until translucent.

Step 2Add the carrot and cauliflower. Mix the hard cider with the chicken bouillon in a large measuring cup. Pour over the vegetables in the Dutch oven. Bring to a boil. Reduce the heat, cover and cook for about 50 minutes, until the the vegetables are very soft.

Step 3Strain, reserving the liquid. Working in batches, add the vegetables to a food processor and puree with a little of the reserved liquid until smooth.

Step 4Transfer the mixture back to the Dutch oven and add the milk and heavy cream. Stir and cook over low heat for about 5 minutes. Taste and season with salt pepper.

Step 5Serve garnished with chives.
