Ingredients For cauliflower hard cider porridge

  • 2 Tbsp
    butter
  • 1 md
    onion, diced
  • 4 clove
    garlic, minced
  • 1 md
    carrot, sliced
  • 1
    head cauliflower, broken into florets
  • 2 1/2 c
    hard apple cider
  • 2 Tbsp
    chicken bouillon
  • 1/2 c
    milk
  • 1/2 c
    heavy cream
  • salt and pepper, to taste
  • chives, to garnish

How To Make cauliflower hard cider porridge

    Add the butter to a large Dutch oven over medium-high heat. Add the onion and garlic and cook until translucent.

    Add the carrot and cauliflower. Mix the hard cider with the chicken bouillon in a large measuring cup. Pour over the vegetables in the Dutch oven. Bring to a boil. Reduce the heat, cover and cook for about 50 minutes, until the the vegetables are very soft.

    Strain, reserving the liquid. Working in batches, add the vegetables to a food processor and puree with a little of the reserved liquid until smooth.

    Transfer the mixture back to the Dutch oven and add the milk and heavy cream. Stir and cook over low heat for about 5 minutes. Taste and season with salt pepper.

    Serve garnished with chives.
