great alternative to potatoes. I love cauliflower it is so versatile and can be made in many different ways.

Ingredients

  • 1 large head cauliflower
  • 1/4 cup milk
  • 5 tablespoons butter
  • 4 ounces provolone cheese shredded
  • 1/4 cup fresh basil chopped
  • - salt and pepper to taste

How To Make cauliflower couscous with provolone and basil

  • Step 1
    Cut cauliflower into pieces. Process in batches in food processor until chopped fine.
  • Step 2
    Add butter to skillet. Stir in cauliflower and saute until softened stirring often. Pour in milk and add shredded provolone. Cook until cheese is melted.
  • Step 3
    Season to taste with salt and pepper. Stir in basil. Remove from heat and serve.
