Ingredients
- 1 medium cauliflower head, broken up
- 4 large red new potatoes, unpeeled and cut in 1/4
- 1 tablespoon butter
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3 - eggs
- 3/4 cup Gruyere cheese
- 1/4 teaspoon cayenne pepper
How To Make cauliflower casserole

Step 1Cook the cauliflower in boiling salted water for 15 minutes or until tender.

Step 2Meanwhile, cook the potatoes in boiling water for 15 minutes or longer until tender.

Step 3Drain the potatoes and cauliflower and place them in a mixing bowl. Add the butter, salt, pepper, and cayenne.

Step 4Mash together to make a puree; it is better to use a potato masher as a food processor can make it too mushy.

Step 5Beat the eggs into the puree, one at a time,

Step 6Then stir in the cheese.

Step 7Spoon into a greased dish and bake for one hour with foil on it in a 350 oven.
