This recipe was inspired by Casssie..I had some mini bell peppers and a cauliflower in the refrigerator so I used them to make this delicious casserole. My family loved it even Bob who hates most cooked vegetables...thanks Cassie for your inspiration...

Ingredients

  • 1 large
    head of cauliflower, cut into bite size pieces
  • 6
    mini bell peppers, mixed colors,seeded chopped
  • 3 Tbsp
    or more minced onions
  • 10 oz
    can cream of chicken soup with herbs
  • 1/2 c
    monterey jack queso (south of the border brand)
  • 3 Tbsp
    butter
  • 2 Tbsp
    dried chives
  • 3/4 c
    shredded colby jack cheese
  • TOPPING:

  • 1 1/2 c
    seasoned croutons only,not panko or crumbs
  • 1/2 c
    or a bit more shredded cheddar cheese
  • 1/4 c
    real bacon bits

    combine together in a baggy and set aside.

How to Make Cauliflower Baked in Queso Sauce

Step-by-Step

  1. Place cauliflower and pepper pieces in Microwave safe dish with 1 cup of water. Cover and cook for 13 minutes.
    Drain water. Set dish aside.
  2. In a medium mirco wave safe bowl;combine butter, chives ,onion, soup,Queso and cheese. Cook in micro wave for 2 minute;remove and stir to mix and blend.
  3. Pour this mixture over cauliflowermixture and stir to coat evenly.
    Bake in 350º for 25 minutes. Remove from oven and sprinkle topping over all. Bake for 15 minutes more or until golden brown and crunchy. Let set for 5 minutes before serving..to let sauce thicken.
