This is a go-to recipe a friend of mine, Cathy, gave me. Great for summer BBQ's or as a side dish.

Ingredients

  • 2 bunches broccoli, chopped
  • 1 - red onion
  • 6 ounces monterey jack cheese, shredded
  • 1/2 pound bacon, fried crisp and crumbled
  • DRESSING
  • 1 cup mayo
  • 4 tablespoons vinegar
  • 1/2 cup sugar

How To Make cathy's fresh broccoli salad

  • Step 1
    Mix all ingredients except bacon in a shallow dish and pour dressing over - mix well and refrigerate covered. Make 24 hours ahead and every so often give the dish a shake to distribute. When you are ready to serve, toss bacon in.
  • Step 2
    You can decrease to 1/4 cup sugar if you like and substitute nuts and raisins for the bacon.
