This is a go-to recipe a friend of mine, Cathy, gave me. Great for summer BBQ's or as a side dish.

Ingredients

  • 2 bunch
    broccoli, chopped
  • 1
    red onion
  • 6 oz
    monterey jack cheese, shredded
  • 1/2 lb
    bacon, fried crisp and crumbled
  • DRESSING

  • 1 c
    mayo
  • 4 Tbsp
    vinegar
  • 1/2 c
    sugar

How to Make Cathy's Fresh Broccoli Salad

Step-by-Step

  1. Mix all ingredients except bacon in a shallow dish and pour dressing over - mix well and refrigerate covered. Make 24 hours ahead and every so often give the dish a shake to distribute. When you are ready to serve, toss bacon in.
  2. You can decrease to 1/4 cup sugar if you like and substitute nuts and raisins for the bacon.
