carrot and pineapple coleslaw

My neighbor Rodger every year during the holidays or barbecues would make this coleslaw and I loved it! Its sweet and creamy and was always gone, quickly. He finally gave me the recipe after years of asking and I'm glad I have it since I no longer live near him anymore. I think of him anytime I have this and miss him terribly. Funny how food brings us such happy memories.

Ingredients

  • 2/3 cup mayonnaise
  • 2/3 cup sour cream
  • 1 teaspoon grated onion
  • 1 tablespoon lemon juice
  • 2 teaspoons sugar
  • 1 - pinch salt
  • 1 - can pineapple chunk, drained (8 oz), can add more if you like. do not use crushed
  • 1 cup shredded carrot
  • 2 cups shredded cabbage

How To Make carrot and pineapple coleslaw

  • Step 1
    In a small bowl, combine the cabbage, carrot, onion and pineapple. (I cut the pineapple chunks in half) In another small bowl, whisk the mayonnaise, sour cream, salt, sugar and lemon juice; pour over pineapple mixture; toss to coat. Chill for about an hour or two.
